Does any one know, what kind of softwares to make symbian games ?

Basically you have two options: make J2ME games (the easy way) or make games in C++ (the hard way). In Java games the performance is pretty much so-so, but making games in C++ for S60-devices is a royal pain in the ar$e. Trust me. But if you want more information, forum.nokia.com is your place to be.
