I've figured out the secret of why some people can see album artwork and some people can't. Be sure your ID3 tags in your songs are version 2.3. There are many versions available, but 2.3 seems to make the artwork show up. Of course, you need to add artwork to your songs in the first place!

If you're using iTunes, select all of your songs, select "Get Info", and drag album artwork to the small album artwork box. Then select all of your songs again, go to the 'Advanced' menu, and select "Convert ID3 Tags...". You can then select version 2.3. Send your songs to your Nokia and your artwork should show when you play each song.
